Ingredients
3 pieces matzo broken in half
3 bananas
1 egg
1/4 cup vegetable oil
1/4 cup maple syrup
1 tbs butter
1 tbs cinnamon
1/4 cup walnuts
Directions
1. Soak matzo in cold water for 5 min
2. Mash 1 banana and mix with maple syrup, vegetable oil, egg and cinnamon
3. Gently fold matzo into banana mixture
4. Heat 1 tbs butter in skillet
5. Add matzo to skillet and flatten to create a solid layer
6. Cook for 3 min, or until bottom begins to brown
7. Flip matzo cooking for 2-3 more min
8. Remove from skillet, topping with walnuts and slices of remaining bananas
Tried it this morning. Delicious! Light and flavorful!
